W Doha’s award-winning Spice Market welcomes a new Chef de Cuisine Taimoo Sun

W Doha Hotel & Residences welcomes a new Chef de Cuisine at its award-winning restaurant, Spice Market. Chef Taimoo Sun, who goes by the name Spencer Sun, joins the elite team of culinary geniuses and brings his 14 years of experience to contribute in ensuring the renowned South-East Asian restaurant maintains its reputation as one of the best and most innovative brand in the hospitality industry.

In 2002, Chef Spencer started his culinary journey at the College of Hotel and Culinary Arts at Sorabul Hotel University in South Korea where he hails from. He then gained hands on experience while serving at the South Korean Navy for more than two years. With a bright future in the gastronomical field at a young age, the promising chef then went on to learn the art of sushi at Marche Restaurant in South Korea and further went on to intern at the Sky Lounge Kitchen at Lotte Hotel.

With hard work, his career took another milestone in 2006 where he assisted the Chef at the cold section of Fine Dining at Table 34, The Grand Intercontinental as well as the sushi station buffet and main kitchen. Following this, he worked at JW Marriott Hotel, Seoul for four years as Commis 2 where he assisted with Banquets as well as preparing sushi along with cuisines such as Indian and Thai. His accomplishments were further recognized as he received various awards at the Seoul International Culinary Competition. The extensive list included two gold medals in Live Cooking and Hot Parts, four silver medals in Live Cooking, Hot Parts, and Cold Parts, while also receiving a bronze medal in Global Korean Food.

Gaining substantial training in upscale kitchens of high volume, Chef Spencer progressed to the Marriott Marquis Doha in March 2011, he was promoted from Demi Chef de Partie to Chef De Partie and added to his knowledge of Western, Asian and Japanese cuisines, and trained in molecular cuisine. He also demonstrated remarkable leadership skills by maintaining standards and ensuring the highest quality of food while fostering teamwork. His supervision skills were awarded with the completion of his certificate in Essential Skills for Supervisor and Manager with an accolade of “Supervisor of the Month” in June 2012 at the hotel.

In 2015, Chef Spencer assumed the role of Chef De Partie at the celebrity brand Nobu in Miami. After training in different sections of the kitchen at the headquarters of Nobu in Miami by the corporate chef, he also helped with the pre-opening of Nobu Eden Rock Hotel and was trained to emerge as the senior chef at Nobu’s worldwide locations. During that time he had the opportunity to work with well-known chefs such as Thomas Buckly and offer Omakase corporate menus. He has now been appointed as the new Chef De Cuisine at the Spice Market in W Doha Hotel and Residences.

The passionate young chef further aims to achieve his dreams and goals of leading an entire team while promising loyalty, forging teamwork and guaranteeing unprecedented success to the organization he’s part of. The talented chef has been rising in the gastronomical field and has shown no signs of stopping.
